What Is Kefir?

The cultured milk behind the brightness — and one of the quiet foundations of Greek Snow.

Kefir is one of those ingredients that sounds modern but is, in fact, ancient. A fermented milk drink with roots in the Caucasus mountains, it has been made for centuries — long before anyone thought to put it on a café menu. What kefir actually is

At its simplest, kefir is milk that has been transformed by fermentation. You begin with fresh milk and introduce kefir grains. Over a day or so at room temperature, those grains work through the milk, converting some of its sugars and proteins and leaving behind something quite different from where you started: thicker than milk, thinner than yogurt, and carrying a tang that is brighter and more lively on the palate.

Unlike a flavoured drink that is mixed to a recipe, kefir is the product of a process. The fermentation does the work, and the maker's job is mostly to give it the right conditions — the right milk, the right temperature, the right amount of time — and then to know exactly when to stop.

Kefir grains and fermentation

The heart of kefir is the kefir grain. The name is slightly misleading: these are not grains in the cereal sense. They are small, soft, cauliflower-like clusters — a living matrix that hosts a community of bacteria and yeasts held together in a natural scaffold. Add them to milk and they begin to ferment it, gently souring and thickening the liquid as they go.

What makes the grains remarkable is that they are reusable. Once fermentation is done, they are strained out and added to a fresh batch of milk, and the cycle begins again. A single lineage of grains can be kept going more or less indefinitely, which is part of why kefir-making has been passed down through generations rather than bought off a shelf.

Because the fermentation is driven by both bacteria and yeasts, kefir develops a faint, natural effervescence and a more complex sourness than milk soured by a single culture. It is this living, multi-strain quality that gives the drink its lift and its distinctive brightness.

Why timing matters

Fermentation is a moving target. Left too short, kefir is thin and barely soured; left too long, it turns sharp and aggressively tangy. The sweet spot — bright but balanced, tangy but clean — sits in a narrow window. Reading that window is craft, not chemistry alone, and it is exactly the kind of detail that decides whether the finished result tastes refined or merely sour.

Kefir vs yogurt

Kefir and yogurt are cousins. Both are cultured dairy, both are tangy, and both are made by fermenting milk. But they are made by different communities of microbes, fermented in different ways, and they end up with genuinely different textures.

The short version: yogurt is set and spoonable; kefir is pourable and bright. Yogurt is fermented by a small, defined set of cultures at warm temperatures. Kefir is fermented by a larger, more varied community of bacteria and yeasts, usually at room temperature.

That difference in culture is what you taste. Authentic Greek yogurt, strained of its whey, is thick, dense and mild-to-tangy — a texture you can stand a spoon in. Kefir, by contrast, is thinner and looser, with a tang that reads as brighter and more effervescent rather than rich and creamy. Yogurt gives body; kefir gives lift.

Neither is better — they simply do different jobs. And when you put the two together, each covers for what the other lacks. The yogurt brings density and a clean, dairy roundness; the kefir brings brightness, complexity and a silkier, more fluid quality. Both carry live cultures, the hallmark of genuinely fermented dairy.

There is a liveliness to it — a faint natural sparkle from the yeasts — that makes it feel fresh rather than heavy. Good kefir tastes like cultured milk at its most poised: tangy enough to be interesting, smooth enough to be effortless.

That silkiness is not incidental. The fermentation reworks the milk's proteins into a finer, looser network than yogurt's set curd, which is exactly why kefir pours rather than holds. It is a texture built by microbes, and it is difficult to imitate by any other means.
